Beat the heat with this NO-COOK sensation that's taking social media by storm! 🌞 Just 10 minutes to Mediterranean bliss in your own kitchen! Made this refreshing Spanish gazpacho today and it's literally summer in every spoonful—vibrant, cool, and bursting with garden-fresh flavors!
Recipe:

2 pounds ripe tomatoes, roughly chopped
1 small cucumber, peeled and chopped
1 red bell pepper, seeded and chopped
1 small red onion, chopped
2 garlic cloves, peeled
2 slices day-old bread, crusts removed and torn into pieces
2 tablespoons sherry vinegar (or red wine vinegar)
1/3 cup extra virgin olive oil, plus more for drizzling
Salt and freshly ground black pepper to taste
Optional garnish: finely diced cucumber, bell pepper, onion, croutons

Instructions:

Soak bread in water for 5 minutes, then squeeze out excess moisture
Combine all ingredients except garnishes in a blender
Blend until completely smooth (about 2 minutes)
Taste and adjust seasoning if needed
Refrigerate for at least 2 hours (overnight is better!)
Serve cold in chilled bowls with finely diced vegetables, croutons, and a drizzle of olive oil
