I used to think I needed the whole plan figured out before I could really start... Looking back, that was probably some of the worst advice I ever followed.
If I waited for everything to feel perfect and “ready,” I’d still be sitting around planning, with no business and no success.
A lot of what actually worked for me was just taking that first step, learning as I went, and adjusting along the way.

I just got started.

I feel for hospitality owners; this is a tough market. With already thin margins, operators are constantly navigating challenges from every direction.
This story Vivian shares isn’t unique, unfortunately. It reflects a growing reality: hospitality owners are increasingly being held accountable for every interaction within their establishments. Every detail matters, because even the smallest moment can escalate into unexpected outcomes...like negotiating the cleaning or replacement of a designer bag.
It’s a reminder that in today’s environment, nothing is “just a small thing” anymore.

Trends shape industries, and this one looks like it’s here to stay: less alcohol, more wellness.
Vivian and I sat down to talk about how the rise of alcohol-free concepts and “sober curious” culture is changing hospitality in NYC, and what restaurant operators should be paying attention to as consumer habits shift.
What’s fascinating is how quickly the city evolved. In just a few years, NYC went from one of the biggest party capitals in the country to a market that’s increasingly wellness, moderation, and liver-conscious. Smart operators are paying attention because culture shifts always become business shifts.

Started from the bottom now we’re here. And there’s still a ways to go.

My calendar this week looks like one of those paintings my 2-year-old stuck to the fridge, an ugly mess of color but you love it because it’s your kid. I love it because a full calendar means something. It’s proof of how far we’ve actually come.

When I left big law, I had little. No clients, a tiny office in Astoria, and a whole lot of grit mixed with the belief that calculated risk beats playing it safe. But I had something else. An amazing family grounding me and a community, the Greek community, that never failed to show up.

Now we’re at 40 Wall and IX Legal is something else. We’ve grown so much. But the thing that actually matters? It’s the people who built this with me.
My family taught me to work hard. Leaving big law taught me you can’t grow without risk. But building community? That’s what made any of it actually mean something.

I was standing in that room at the Hellenic Lawyers Association event today just looking around. These are people who get it. Immigrant families. Risk takers. People who didn’t ask for permission, they just moved.

That’s the real win. It’s the people who believed early and stuck around.
Still climbing. Still learning. Grateful for moments like that, ones that remind me where I came from.

Salud to busy calendars, ugly fridge paintings and a life well lived with people well liked.

Vivian goes to Vegas!!!
Fresh off recent hospitality deal work, Vivian shares something most new operators don’t realize: in hospitality, there are terms and structures that are considered “standard”… and then there are the terms that quietly shift leverage without you realizing it.
The difference usually doesn’t come from a textbook. It comes from experience, pattern recognition, and years of conversations behind the scenes with operators, landlords, investors, and brands.
If you’re building in hospitality, from a single concept to a growing group, understanding the legal side early changes everything.

With all the liability and exposure that comes with building in NYC, sometimes the best deal is the one that never happened.

A lot of new operators focus on the exciting parts: the concept, the branding, the build-out, the launch. Seasoned operators know the smallest detail can become the biggest problem later. One lease clause. One permit issue. One bathroom not ADA compliant. One overlooked responsibility between partners.

That’s why experience matters. Not just experience running a business, but having experienced attorneys in your corner who can spot problems before they become expensive lessons.

I can’t speak for every firm, but I know our team at IX Legal acts as both protection and perspective. A lot of what we bring to the table comes from seeing these situations play out in real time, over and over again.
