I have a small hobby/obsession - making jams, jellies and preserves out of fresh seasonal fruit. Lots of jam - dozens and dozens of jars. Since I make them in my kitchen, I couldn't sell them, so I gave them away - as presents, door prizes, sampling and donation. And we laughingly called it The Illegal Jam Company. These are small batch jams - typically 6-8 one cup jars at a time. All the ingredie

nts are natural - sometimes they are organic, sometimes not. I use real sugar - organic turninado, raw sugar, brown sugar, demerrera or even plain old white sugar. The sugar content varies, but it is never more that 3 cups of sugar for 8 cups of fruit. That comes out to approximately 6 tablespoons for the whole jar. So try not to eat a whole jar in one sitting! Florida made my formerly illegal jam legal on July 1, 2011 with the Cottage Food law. People can use their kitchens to make just a few different things which have to be sold directly to the consumer.
