Five years later, you try to sell. Title company finds an open permit. The contractor is gone. The sale is delayed. You pay to close it.

We see this happen constantly.

Before you make that final payment, ask: Are all permits closed? And can you prove it?

A grease trap issue will not wait until opening day to surface. It gets caught in the process — and if your trap is missing or undersized, you will be required to install or upgrade before anything moves forward.

Sizing is not straightforward. It is based on your specific operation: meals served, fixture counts, seating capacity, pump-out frequency. These numbers are determined at plan review, not at the hardware store.
