Associate Yasmin Younis celebrates Arab American Heritage Month by sharing what makes the favorite Iraqi dish dolma so special.
"Dolma is stuffed grape leaves, onions, and other vegetables like zucchini, eggplant, and peppers. While every Arab country has its own version of dolma, the Iraqi version is truly unique in its preparation: the spices used and the variety of vegetables stuffed with a flavorful mixture of rice, ground meat, and aromatic herbs. But what makes dolma truly special for me is the deep connection it fosters — it’s not just a meal; it’s a labor of love, and that’s something at the heart of Iraqi and Arab culture as a whole.
"Iraqis, like many Arabs, are known for their unmatched hospitality and love for others. We open our homes and hearts to family, friends, and even strangers, treating them like our own. While everyone in the Arab world speaks Arabic, acts of service is the universal love language, and one of the most heartfelt ways we express our care is through food. Dolma, for me, is a perfect reflection of this culture of love and connection.
"Growing up, whenever we had guests—whether family was visiting from abroad or friends gathered for a special occasion—dolma was always on the table. My mom and grandma would spend hours in the kitchen, preparing each roll with such care. It wasn’t just about the meal; it was about showing love and respect to those we cared for. Dolma is a dish that requires patience and attention; it takes time to prepare and to cook, just as it takes time to nurture and cherish relationships.
"The process starts with carefully washing grape leaves, onions, and other vegetables, then making the filling of rice, ground meat, onions, and spices. Each vegetable is lovingly stuffed, ensuring every roll is packed tightly and neatly. As the dolma simmers slowly for hours, absorbing the rich, aromatic flavors, it transforms into something truly special. It’s not a quick meal — it’s something you prepare when you want to show someone they are valued and loved.
Every step, from prepping the ingredients to the long cooking process, reminds me that making dolma is more than just cooking; it’s an act of care, patience, and love. That’s why dolma is not just my favorite dish — it’s a powerful representation of Iraqi culture and hospitality. It’s about sharing not only food, but also the warmth and love that go into making it."
