My Squash Zucchini Medley in Tomato Sauce
2 squash
2 zucchini
2 cloves fresh, diced garlic
Olive oil - 1 trip around a hot pan
Siracha hot powder to taste
Heat pan with olive oil
Coat vegetables with smoked paprika and salt
Brown slightly on medium heat high
Add 1 28 oz can peeled, chunky tomatoes
Basil - 1 trip around the pan
Herbes de Provence - 2 trips around the pan
Salt to taste
Cover and simmer for 20 minutes
Uncover and allow the sauce to cook and thicken for another 3 minutes
Serve over rice, as a side dish, or over noodles or pasta.
