Every -bertos taco shop in the American Southwest traces back to two houses in San Ysidro. 🌮

Roberto Robledo came north from San Juan del Salado, in San Luis Potosi, in the mid-1940s as a bracero, a contract farm laborer. Dolores followed with the children. In 1964 the family bought two adjacent houses in San Ysidro, a few hundred yards from the border. One they lived in. The other became a tortilla factory, turning out corn and flour tortillas for other people's restaurants and selling burritos out the front.

The restaurants came after that. The family bought and ran several, including La Lomita and El Gallito, and it was the fifth one, a former hamburger stand renamed in the late 1960s, that first carried the name Roberto's.

The Robledos had thirteen children, and family branched into family. When relatives running a leased Roberto's let the quality slide, Roberto told them to take his name off the sign. Family accounts say they simply repainted it. Alberto's.

After that it multiplied: Alberto's, Adalberto's, Filiberto's, Aliberto's, Hilberto's, Rigoberto's, more than seventy documented variations across the Southwest, most founded by people from that same village in San Luis Potosi.

One family from one Mexican town wrote the menu half the Southwest eats at two in the morning.
