Born in a Zapotec community in Oaxaca, Chef Luis brings a deeply personal approach to his cuisine — honoring ancestral Mexican techniques through a modern lens. As founder of Tequio Foods, he works directly with Indigenous farmers to preserve heritage ingredients, and as a member of the World Central Kitchen Chef Corps, he lends his talents to communities impacted by natural disasters.

Hosted on February 18th at The Ruffed Grouse Tavern at Highlander Mountain House, the three-course dinner showcases nixtamalized techniques and is paired with handcrafted cocktails from Don Gato Tequila to completed the dining experience.
