If there’s one thing we’ve learned during our wine journey that we wish others would take to heart, it’s this: people should drink more Riesling. If you don’t believe us, find yourself a bottle of Dönnhoff; this producer, situated in the Nahe region of Germany (the Mosel’s overlooked counterpart, for all you other wine nerds out there) is known for making excellent Riesling, many of which are bone dry and absolutely beautiful. Try it with Asian food, anything spicy, or even something fried and decadent—this stuff goes with pretty much everything.

In the landscape of Texas wineries, most are attempting to replicate the successes of either Old World or New, but one up and comer is carving out an entirely unique path. Slate Theory is almost more of a vibe than a business, curating a winery built around psychology references and the dreamy imagery of Carl Jung. This rosé in particular is one of our favorite Texas wines, made from Tuscany’s signature grape, Sangiovese. It carries the savory characteristics we expect from great Chianti while still offering a crisp, refreshing mouthfeel.

Wednesday's Wine Selection: Tenuta di Castellaro ‘Ypsilon’

Blend: Red Blend

It takes a while for the Texas temperatures to finally start drifting down to manageable levels; for us, that means it’s usually pretty late into the year (or even into the next one) before we really start craving red wines. Even when the urge finally does strike, we still don’t want our first bottle fresh out the gate to be some bold, tannic monster. Enter Sicilian wines; they’re a perfect bridge between the warmer and colder seasons of the year, light bodied but well-structured enough to hold up on their own. This offering from Tenuta di Castellaro is a perfect example, blending Corinto Nero, Nero d’Avola, and Alicante for a smooth and supple red that is fresh but still packs a punch. Fermented and aged entirely in stainless steel, Ypsilon has all the bright red fruit we love in lighter reds but with spice notes and smooth tannins that broaden its appeal.

Wednesday's Wine Selection: Domaine Chanson Viré-Clessé 2019

In last week’s post, we mentioned how obsessed we are with Burgundy whites, so we couldn’t go through the entire year without at least finding one affordable offering from this storied region to show you just why we love it so much. Enter Domaine Chanson’s 2019 Viré-Clessé. For Burgundy wines in particular, you have to really delve into the nitty gritty of the winemaking process to suss out what you want and what you’ll get; whether a winemaker uses oak, and what kind and to what degree has an immense impact on the wine, especially in combination with the terroir of the vineyard site. For this bottle, the winemaker chose to minimize the use of oak (no more than 20% new oak) to pursue a balanced, well-structured wine, characterized by orchard fruit, florals, and a mineral backbone.

Wednesday's Wine Selection: Lioco Sonoma County Chardonnay 2021

Blend: 100% Chardonnay

In this house, we’re typically Burgundy hounds, but every once in a while a domestic Chardonnay comes around that reminds us which country actually issues our passports. Kendall Jackson this most definitely is not. With not even a whisper of oak, the Lioco Sonoma County Chardonnay is a testament to why people fell in love with this landscape for wine in the first place. A fascinating blend of sites all around the Russian River Valley–for the Cali nerds out there, those are Piner and Occidental, among others–Lioco crafted their Chardonnay as a love letter to Sonoma terroir, going so far as to put a map of the watershed right on the label. As such, it’s a beautiful balance between fruit and minerality, acidity and body, all of which make it perfectly drinkable.
