Uneven heating across a commercial griddle is more than a cooking inconvenience. It can be an early warning that the equipment is no longer operating at its intended performance. For restaurants, hotels, and cafΓ©s, this can directly affect food consistency, service speed, operating costs, and customer satisfaction.
What does βuneven heatingβ actually mean?
A properly functioning commercial griddle should provide relatively consistent heat across its cooking surface. If one area is significantly hotter or colder than another, you may notice: burgers cooking faster on one side than the other, pancakes or eggs browning unevenly, meat developing inconsistent searing, food taking longer to cook in certain areas, staff constantly moving food around to find the βhot spotβ and some products being overcooked while others remain undercooked
For a busy commercial kitchen, this can become a serious operational issue.
What can cause uneven heating?
1. Faulty or deteriorating heating elements - For electric griddles, heating elements may weaken, partially fail, or develop uneven heat output. The griddle may still turn on and appear functional, but it may no longer distribute heat properly.
2. Burner problems - For gas griddles, blocked burner ports, improper gas pressure, dirty burners, or combustion problems can cause certain sections to produce less heat than others.
3. Thermostat problems - A thermostat regulates temperature. If it is inaccurate, poorly calibrated, or failing, the griddle may cycle incorrectly, resulting in temperatures that are too high, too low, or inconsistent.
4. Poor heat distribution - The problem isn't always the heating source. Heat must travel effectively through the griddle plate. Damage, deterioration, poor contact between components, or other mechanical issues can affect how heat spreads across the surface.
5. Excessive carbon or grease buildup - Heavy buildup can interfere with heat transfer and create irregular cooking conditions. It can also make temperature control more difficult.
6. Improper installation or ventilation - Commercial cooking equipment needs to operate under appropriate conditions. Problems with installation, ventilation, or surrounding airflow can affect equipment performance.

Imagine a restaurant preparing 100 burgers during a busy service. If one section of the griddle is significantly hotter than another, the kitchen team may have to compensate manually. Some burgers may cook quickly while others take longer. Staff may move food repeatedly across the cooking surface, increasing handling time and slowing production.
