Hi lovely people how about some Coconut Chicken With eggs for iftar? Try it out and let me know feel free to share with your friends...
Ingredients
1 capon cut into 8 pieces (with skin)
1 tablespoon garlic ginger paste
1 tablespoon minced green chilli
½ teaspoon garam masala
1 lime squeezed
salt to taste
½ teaspoon turmeric powder
1 onion cut into slices
2 tomatoes
1 ½ cup thick coconut milk
6 hard boiled eggs
method
Place the chicken pieces in a pan add in garlic ginger paste and lime juice and bring to a boil (without adding water) the chicken will produce its own juices let it simmer until cooked and almost dry.
Blend onions with tomatoes and the coconut milk in a food processor or blender, pour the mixture onto the cooked chicken add all the remaining spices and bring to a boil adjust seasoning and cook until the sauce becomes thick and coats the chicken well.
Add in your peeled boiled eggs and serve with rice or with your favorite naan. Enjoy ❤️

Hi awesome people here is a super weekend recipe Fried fish (Kole Kole) served with coconut Rice and veges

Coconut Rice
1 1/2 Cups water
1/2 cup coconut milk
1 cup Rice
Salt to taste

Cook the rice as usual you can combine all ingredients in a Rice cooker and you are good to go.
Fish
3 whole fish cleaned
3 lemon squeezed
2 cloves of garlic minced
1 teaspoon cayenne pepper
Salt to taste

500ml vegetable oil for frying

Marinate the fish with all the ingredients and set aside to infuse flavors for 15 minutes then deep fat fry to a crispy texture and golden color.

Mixed Vegetables

4 large potatoes peeled and cubed
4 Eggplants cubed

Deep fat fry the potatoes and Eggplant to a golden color and set aside.

Sauce
2 tomatoes sliced
1 large onion finely chopped
1 Clove of garlic minced
2 tablespoons tomato paste
1 lemon squeezed
1/2 teaspoon turmeric
Salt to taste
1 teaspoon oil

Saute the onion and garlic until golden brown add in the turmeric tomatoes and tomato paste mix well then add in the lemon juice and salt to taste bring to a boil until thick and reduced then add in 3/4 the fried vegetables keep the remaining aside for garnishing.

On your serving platter pour the rice as the base then arange the fish on top layer with the mixed vegetable mixed with the Sauce then garnish with the remaining fried vegetables and coriander on top.

Hi Amazing people here is my Swahili Boneless Chicken Biriani recipe as seen on Celebrity kitchen Raid feel free to share the recipe with your friends
1 kg boneless Chicken breast
500ml veg oil
4 large onion sliced
1/2 kg potatoes peeled and cut into halves
1 teaspoon garlic minced
1 teaspoon ginger minced
1 teaspoon turmeric powder
1/2 teaspoon ground garam masala
1 tablespoon whole pilau mix
1 Chicken cube
2 tomatoes cubed
1 green pepper finely diced
300g tomato paste
3 lemons squeezed
250ml thick plain yoghurt
Salt to taste
Rice
2 cups basmati rice (Sunrice)
4 cups Water
1/2 teaspoon yellow food color
Saffron
Salt to taste

Method
In a deep fat frying pan add in the oil and fry the onions to golden brown using the same oil fry the potatoes to get a good crust from the outside then keep aside.

Cut the boneless chicken in cubes and keep aside. in a separate pan Add In some vegetable oil (Use the same oil for onions its flavorful) and fry the garlic and ginger Saute for 2 minutes partly crush the whole pilau mix and throw in then add the turmeric and Garam masala continue to Saute then throw in the chicken cube and chicken breast pieces sauté for 2 minutes then add in the tomatoes, green peppers, tomato paste and yoghurt stir to coat the flavors and then add In the potatoes then sprinkle fried onions on top then let it cook while you add in the and lime juice then bring to a boil cover and let it Cook until reduced about 10 Minutes on medium heat.

On the other hand Measure 4 cup of water and add in the 2 cups of rice and salt cover and cook until the rice is partly cooked drain excess water (not 100% cooked)

While the chicken sauce is reduced add in the partly cooked rice on top sprinkle the diluted yellow food color with saffron on the rice and 2 tablespoons of the oil used to fry onions cover with a tight lid then put on a low flame so that the rice can steam and absorb flavor from the sauce on the bottom.

To serve remove the rice gently and serve on a big platter (sinia) then stir the thick chicken sauce to combine well and put in the middle of the rice serve with Kachumbari and your favorite chutney
