Having trained in Ballymaloe in 1991, he continued to work there for five years which led to him working in several Michelin stared restaurants in Belfast and London where he gained invaluable experience and knowledge. Whilst there, Michael was voted Best Chef of the year in 2012 by the Restaurant Association of Ireland and has also won numerous awards such as the Irish Independent Food and Wine A
ward, “Georgina Campbell Awarded ‘One Star’”…. to name a few! Over the last couple of years Michael has channeled his experience into the world of teaching, working with the Culinary Arts programme in Waterford Institute of Technology and also in the area of Adult Education. Michael enjoys nothing more than using his broad knowledge of cooking styles and techniques to encourage simple, but creative cooking which makes the most of fresh, local ingredients. He is a strong advocate and supporter of bringing local food to local people and is proud of the quality of produce we have in our own back yard. His passion is to teach and encourage people to be creative in the kitchen and to pass on the knowledge and experience which he has gained throughout his career.
