MAIN INGREDIENTS
1 cup dried green lentils
1 onion, chopped
2 carrots, sliced
2 celery stalks, diced
3 garlic cloves, minced
1 can diced tomatoes
ADDITIONAL INGREDIENTS
to taste salt and pepper
1/2 tsp turmeric
4 cups vegetable broth
2 tbsp olive oil
2 tsp cumin
1 tsp paprika
1/4 cup fresh parsley, chopped
METHOD
1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and cook until softened.
2. Add garlic, cumin, paprika, turmeric, and cook for another minute.
3. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
4. Season with salt and pepper to taste.
5. Serve hot, garnished with fresh parsley.
