سرسوں یا سروں (سائنسی نام: براسیکا کمپیسٹرس)[1] ایک زرعی طور پر اگائے جانے والے پودے کا نام ہے۔ اس کے پھول چھوٹے اور پیلے رنگ کے ہوتے ہیں۔ سرسوں چارے کے طور پر اگایا جاتا ہے۔ اس کے پتوں اور گندلوں سے ساگ پکایا جاتا ہے۔ سرسوں کے بیجوں سے تیل نکالا جاتا ہے جو پکانے، جسم پر لگانے اور مشینوں میں استعمال ہوتا ہے۔

اس کو اکتوبر کے مہینے میں کاشت کیا جاتا ہے۔ فروری کے مہینے میں سرسوں کے پودوں میں پھولوں کا آنا بسنت کی علامت ہے۔ اس لیے ہر طرف پیلا اور سبز رنگ دکھائی دیتا ہے۔ سرسوں پاکستان کی سب سے بہتر اور معیاری ہے جس سے ساگ۔تیل اور جانوروں کے چارے کے لئے استعمال کیا جاتا ہے پاکستان کی سرسوں میں بہترین اور خالص تیل نکلتا ہےجس میں قدرتی خوشبو بھی پائی جاتی ہے

گڑ گنے کے رس سے بنایا جاتا ہے۔ جسے عربی میں فارلیذ،فارسی میں قندسیاہ بنگالی میں گڑاورانگریزی میں: Jaggeryکہا جاتا ہے کسان عام طور پر بیلنے کے ذریعہ گنے کا رس نکالتا ہے اور بعد میں اسے پکا کر گڑ بناتا ہے۔ گنے کے رس کو پکا کر جمالیا جاتا ہے۔ قوام کو سخت بنا کر ہاتھوں سے مل کر سفوف بنا لیں تو اس کو شکر سرخ کہتے ہیں۔ اس کا رنگ سرخ ہوتا ہے۔ بعض دفعہ رنگ سرخی مائل سیاہ اور زرد بھی ہوتاہے اور ذائقہ شیریں ہوتا ہے۔ اس کا مزاج گرم اور دوسرے درجے میں تر ہوتا ہے۔ پرانا گڑ گرم و خشک ہوتا ہے۔ اس کے درج ذیل فوائد ہیں۔

1۔ کھانے کو ہضم کرتاہے۔
2۔ طبیعت کو نرم کرتا ہے۔
3۔ بلغم کو چھانٹتا ہے ۔
4۔ دمہ، کھانسی اور درد سینہ میں گڑکو کالی مرچ اور ادرک کے ہمراہ پکا کر کھانا بے حد مفید ہے۔
5۔ ہم وزن نمک اور شہد کو کوزہ میں بند کر کے گل حکمت کریں پھر اسے جلا کر چاٹنا کھانسی کے لیے مفید ہے۔
6۔گوشت کو گلانے کے لیے اگر اس میں گڑ ڈال دیا جائے تو جلدی گل جاتا ہے۔
7۔ بعض معجونات میں اطباء اکرام شہد کی بجائے گڑ کا قوام استعمال کرتے ہیں۔
8۔ جسم کو طاقت دیتا ہے اور موٹا کرتا ہے۔
9۔ ایک سال پرانا گڑ خون صاف کرتا ہے اور باہ کو بڑھاتا ہے۔ مگر اس کا زیادہ استعمال نقصان دہ بھی ہے۔
10۔گڑ کا استعمال دانتوں اور خون کے لیے مضر ہے۔
11۔گڑ چینی سے زیادہ مفید ہے اور اتنا نقصان دہ نہیں ہوتا۔
